Ingredients: Gizzards,Scotch bonnet peppers,Tomato,Onion,Maggi cube, Salt. 1/4tsp ms dash all spice,
Sweet potato,Oil for frying
PreparationIn a pot, boil gizzards with seasoning for 10-15mins or until soft, adding as little water as possible. In a pan, fry chopped onions, tomatoes and scotch bonnet peppers on medium heat until onions have been caramelized and tomatoes melted. Add gizzards and allow to fry on low heat for 10mins. stirring often so it does not get burnt.
In a pan add oil. Once hot, add cut strips of potato and fry till a golden brown. Serve with a generous amount of peppered gizzards and your favorite drink.
